Our roasted tomato sandwich recipe takes a simple tomato sandwich to the next level with the flavors we have incorporated. Simply made doesn’t mean simply flavored. This vegan sandwich recipe is high in nutrients and taste.
What truly separates this roasted tomato sandwich from any other plant-based sandwich recipe is the smoky flavor from our home-made roasted tomatoes. After trying roasted tomatoes on a sandwich, you’ll never look back! Seriously though, roasting the tomatoes with garlic, olive oil, and spices causes a flavor explosion in your mouth you’ll never forget. The garlic flavor permeates the juicy tomatoes and creates a succulent topping for any sandwich or salad. Once roasted, you can store these tomatoes in the fridge for up to 4 days. Meal planning never tasted so good.
Let’s Talk Vegan Cheese
For this recipe, we decided to use Miyoko’s Smoked Vegan Mozzarella cheese to compliment the roasted flavor of the tomatoes. Yes, you can make this sandwich with any vegan cheese you’d like. However, you won’t want to miss out on your chance to make this the best sandwich ever. Miyoko’s Smoked Vegan Mozzarella is the best vegan cheese James and I have ever tried. Vegan Roasted Tomato Sandwich
- 1 Large Tomato Sliced
- 6 Garlic Cloves
- 1 tsp Dried Basil
- 1 tbsp Olive Oil
- 1 tsp Salt
- 1 tsp Black Pepper
- 1 Ciabatta Loaf
- Alfalfa Sprouts
- 1/4 Yellow Onion Sliced
- Balsamic Glaze to Taste
- Vegan Mozzarella Cheese
- Vegan Mayo to Taste
- Preheat oven to 375 °F while you coat your sliced tomatoes in 1 tbsp of olive oil, 6 garlic cloves, 1 tbsp of dried basil, and salt & pepper to taste. Roast for 15 minutes.
- While the tomatoes and garlic are roasting, prepare your veggies by slicing the onions and gathering the remaining sandwich ingredients.
- Once the tomatoes have roasted, lightly toast your bread and ensemble! Spread the mayo and the roasted garlic on the bread. Top with alfalfa sprouts, roasted tomatoes, sliced yellow onions, balsamic glaze, and vegan Mozzarella.
