Hello! Welcome to our blog and thank you for joining us on our plant-based journey! We are Gaby and James from sunny Fort Lauderdale, Florida. Our mission is to show people that they do not have to miss out on their favorite foods just because they wish to adopt a plant-based lifestyle. We have been vegan for the last four years, and in that time, we have been able to transform our favorite unhealthy comfort foods into delicious vegan meals that are good for the body and soul. It’s time for us to share our journey and delicious vegan recipes with you guys!
My fiance, James, began his vegan journey when we met about 4 years ago. At the age of 21, James was diagnosed with Crohn’s Disease, an auto-immune disorder that affects the digestive system and has no known cure. After years of suffering excruciating abdominal pain, he realized he needed a change. That is when we began dating and I introduced him to the vegan lifestyle we live by today. I had been vegan for about a year at that point and experienced an incredible improvement in my health and well-being.
We did a lot of research on the plant-based, vegan community and started to experiment with some recipes by veganizing them. Only six months after James went vegan, he noticed a huge difference with not only the way he looked but also how he felt physically and mentally. Veganism was clearly becoming a cure for him. So much so, his Gastroenterologist informed us that James no longer has Crohn’s disease and has been able to remise it into a mild Colitis. A disorder with no known cure has somehow gone into remission. That somehow is veganism!
I began my vegan journey after recovering from a triple-malleolar fracture of my right ankle that caused me to be wheelchair-bound for almost 2 months followed by about a year of physical therapy to regain the ability to walk on my right ankle. Despite a relatively decent recovery, my surgeon advised that adopting a healthier lifestyle would not only shed weight off but also decrease the level of toxins surrounding the amount of hardware in my leg. That’s when veganism became a part of my life and I’ve never looked back!
I have been able to lose 67 pounds, regain strength in my ankle, and cleanse my body and mind of toxins while still eating burgers and tacos! Doesn’t that sound like a dream come true? That’s because veganism is the answer to all of your problems. My Cuban born and bred father and mother are also vegan! My father is a Type II diabetic who has now gone into remission and lost 50+ pounds while my mother has also gone in remission from hypertension, no longer takes medicine, and has lost 65+ pounds.
Veganism has saved my life & family and it can save yours. James and I are here to show you that you don’t have to relinquish your culture or your favorite meals in order to adopt a vegan lifestyle!
